Spinach and Coconut Egg Scramble

Ingredients (Serves 2):

  • 4 eggs
  • 1/2 cup coconut milk
  • 1/2 cup spinach, chopped
  • 1 tablespoon shredded coconut
  • 1 tablespoon ghee
  • A pinch of turmeric
  • Salt to taste

 

Instructions:

  1. Beat eggs with coconut milk, shredded coconut, turmeric, and salt.
  2. Heat ghee, sauté spinach, then pour in egg mixture.
  3. Cook on low heat, stirring until set.

 

Protein per serving: ~12 grams

Ayurvedic Side Note: Coconut milk cools Pitta, while spinach and turmeric support digestion and provide grounding energy.
