Coconut Yogurt Dip with Lentil Chips

Ingredients (Serves 2):

  • 1 cup plain Greek yogurt
  • 2 tablespoons coconut cream
  • 1/4 cucumber, grated
  • 1 tablespoon fresh mint, chopped
  • 1/4 teaspoon cumin powder
  • A pinch of salt
  • Lentil chips for dipping

 

Instructions:

  1. Mix all ingredients in a bowl.
  2. Serve chilled with lentil chips.

 

Protein per serving: ~8 grams

Ayurvedic Side Note: Yogurt and cucumber cool Pitta, and lentil chips provide protein and grounding energy.
