Coconut Vegetable Quinoa Bowl

Ingredients (Serves 2):

  • 1/2 cup quinoa
  • 1 cup water
  • 1/2 cup coconut milk
  • 1/2 cup steamed broccoli
  • 1/2 cup steamed carrots
  • 2 tablespoons shredded coconut
  • 1 tablespoon ghee
  • A pinch of cumin powder
  • Salt to taste

 

Instructions:

  1. Cook quinoa in water and coconut milk until soft.
  2. Sauté broccoli and carrots in ghee with cumin.
  3. Serve veggies over quinoa, garnished with shredded coconut.

 

Protein per serving: ~11 grams

Ayurvedic Side Note: Coconut milk cools Pitta, and quinoa provides light yet grounding protein.
