Coconut Chickpea Stew

Ingredients (Serves 2):

  • 1 cup cooked chickpeas
  • 1/2 cup coconut milk
  • 1/2 cup diced tomatoes
  • 1/2 cup diced bell peppers
  • 1 tablespoon ghee
  • 1/2 teaspoon turmeric

 

Instructions:

  1. Heat ghee, sauté bell peppers, turmeric, and tomatoes.
  2. Add chickpeas and coconut milk. Simmer until thickened.

 

Protein per serving: ~13 grams

Ayurvedic Side Note: Chickpeas and coconut milk are grounding and cooling, ideal for Pitta balance.
