Coconut and Vegetable Rice Pilaf

Ingredients (Serves 2):

  • 1/2 cup basmati rice
  • 1 cup water
  • 1/2 cup coconut milk
  • 1/2 cup green peas
  • 1/2 cup diced zucchini
  • 2 tablespoons shredded coconut
  • 1 tablespoon ghee
  • 1/4 teaspoon cardamom powder

 

Instructions:

  1. Cook rice with water and coconut milk.
  2. Sauté zucchini and peas in ghee with cardamom.
  3. Combine rice with vegetables, garnish with shredded coconut.

 

Protein per serving: ~8 grams

Ayurvedic Side Note: Basmati rice and coconut cool and hydrate, while peas add grounding protein.
