Summer Kidschari Kitchari

Introduction:

Kitchari, a traditional Ayurvedic dish, is often used to reset the gut and promote digestive health. Its simplicity and nourishing properties make it a staple in Ayurvedic detoxes, where individuals may consume kitchari exclusively for several days. The combination of mung beans and rice in kitchari is believed to gently scrape the gut, aiding in the removal of toxins and supporting digestive balance.

 

Summer Kidschari:

Summer Kidschari is a playful twist on traditional kitchari, designed to appeal to children while maintaining its healthful benefits. This kid-friendly version, lovingly crafted by parents, combines protein-rich mung beans, comforting basmati rice, and an array of colorful vegetables. The addition of raisins provides a touch of natural sweetness, enticing young palates.

 

Ingredients:

  • 1 cup mung beans (split or whole)
  • 1 cup basmati rice
  • 1 small courgette (zucchini), diced
  • 1 cup mushrooms, sliced
  • 1/4 cup raisins
  • 2 tbsp ghee
  • 2 cups water
  • 1 cup coconut cream
  • 1 tsp ground turmeric
  • 1/2 tsp ground cardamom
  • 1/2 tsp ground cumin
  • 1/4 tsp ground anise
  • Salt to taste

 

Instructions:

  1. Rinse the mung beans and rice under cold water until the water runs clear. Drain and set aside.
  2. In a large pot, heat the ghee over medium heat. Add the diced courgette and sliced mushrooms. Sauté for 3-4 minutes until slightly softened.
  3. Add the rinsed mung beans and rice to the pot. Stir well to coat them with the ghee and vegetables.
  4. Pour in the water and coconut cream. Stir in the ground turmeric, ground cardamom, ground cumin, ground anise, and salt to taste.
  5. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 20-25 minutes, or until the mung beans and rice are cooked and tender, and the liquid is absorbed.
  6. Stir in the raisins during the last 5 minutes of cooking.
  7. Once cooked, remove the pot from the heat and let it sit, covered, for a few minutes.
  8. Fluff the Kidschari with a fork and serve warm.

 

Serving and Ayurvedic Tips:

  • To add extra sweetness, drizzle with honey after serving. Avoid adding honey while cooking, as heating honey can turn it toxic.
  • For adults, sprinkle freshly ground black pepper over the dish before serving. Black pepper increases the potency of turmeric by up to 2000%.
  • Garnish with fresh cilantro for added pitta balancing flavor and freshness.

  • Approximately 10g per serving.
