Ingredients (Serves 2):
- 4 eggs
- 1/2 cup coconut milk
- 1/2 cup spinach, chopped
- 1 tablespoon shredded coconut
- 1 tablespoon ghee
- A pinch of turmeric
- Salt to taste
Instructions:
- Beat eggs with coconut milk, shredded coconut, turmeric, and salt.
- Heat ghee, sauté spinach, then pour in egg mixture.
- Cook on low heat, stirring until set.
