  • 2 large eggs
  • 1/4 cup cooked brown lentils (for added protein)
  • 1 tablespoon ghee
  • 1/4 cup crumbled feta cheese
  • 1/2 red bell pepper (chopped)
  • 1/2 cup fresh spinach (roughly chopped)
  • 1/2 teaspoon turmeric powder
  • 1/4 teaspoon cumin powder
  • A pinch of black pepper (to enhance turmeric absorption)
  • Salt to taste

Instructions:

  1. Heat ghee: In a pan, heat ghee over medium heat.
  2. Add spices: Stir in turmeric, cumin, and black pepper. Sauté for 30 seconds until fragrant.
  3. Cook red pepper, spinach, and lentils: Add the chopped red bell pepper, spinach, and cooked brown lentils to the pan. Cook for 2-3 minutes until the red pepper softens slightly, the spinach wilts, and the lentils are warmed through.
  4. Scramble the eggs: Beat the eggs in a bowl, then pour them into the pan. Stir frequently until the eggs are scrambled to your desired consistency.
  5. Add feta: Stir in the crumbled feta cheese just before the eggs finish cooking. Season with salt to taste.
  6. Serve: Enjoy warm for a satisfying breakfast or lunch.
