Ingredients:
- 2 cups kale leaves, stems removed and chopped
- 2 medium sweet potatoes, peeled and diced
- 1 tablespoon ghee or coconut oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1-inch piece of fresh ginger, grated
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/4 teaspoon ground turmeric
- 1/4 teaspoon ground black pepper
- Salt to taste
- Juice of 1/2 lime
- Fresh cilantro leaves for garnish (optional)
Instructions:
- Heat the ghee or coconut oil in a large skillet or pan over medium heat.
- Add the chopped onion and sauté for a few minutes until it becomes translucent.
- Stir in the minced garlic and grated ginger. Sauté for another minute until fragrant.
- Add the diced sweet potatoes to the pan. Cook for about 10-15 minutes, or until the sweet potatoes are tender and slightly crispy on the outside. Stir occasionally to prevent sticking.
- Sprinkle the ground cumin, ground coriander, ground turmeric, ground black pepper, and a pinch of salt over the sweet potatoes. Mix well to coat the sweet potatoes evenly with the spices.
- Add the chopped kale to the pan and stir-fry for 2-3 minutes until the kale wilts and becomes tender.
- Squeeze the juice of half a lemon over the stir-fry and give it a final stir to incorporate the flavors.
- Taste and adjust the seasoning with more salt or lime juice if needed.
- Remove from heat and garnish with fresh cilantro leaves if desired.
