Coconut Rice Pudding

Ingredients (Serves 2):

  • 1/2 cup basmati rice
  • 1 cup coconut milk
  • 1 tablespoon shredded coconut
  • 1 tablespoon honey
  • A pinch of cardamom

 

Instructions:

  1. Cook rice in coconut milk until soft.
  2. Stir in shredded coconut, honey, and cardamom. Serve warm or chilled.

 

Protein per serving: ~6 grams

Ayurvedic Side Note: Coconut and cardamom cool Pitta, while basmati rice is light and easy to digest.
