Coconut Paneer and Spinach Curry

Ingredients (Serves 2):

  • 1 cup fresh paneer cubes
  • 1 tablespoon ghee
  • 1/2 teaspoon turmeric
  • 1/2 cup spinach, chopped
  • 1/2 cup coconut milk
  • 1/2 cup tomato puree
  • 1/4 teaspoon cumin powder
  • Salt to taste

 

Instructions:

  1. Heat ghee, sauté paneer with turmeric.
  2. Add spinach, coconut milk, tomato puree, and spices. Simmer until thickened.
  3. Serve with flatbread or rice.

 

Protein per serving: ~14 grams

Ayurvedic Side Note: Paneer and spinach are grounding, and coconut milk cools Pitta’s heat.
