Coconut Banana Pancakes

Ingredients (Serves 2):

  • 1/2 cup whole-wheat flour
  • 2 tablespoons shredded coconut
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cardamom
  • 1 banana, mashed
  • 1/2 cup coconut milk
  • 1 tablespoon ghee (for cooking)
  • Honey for drizzling

 

Instructions:

  1. Mix flour, coconut, baking powder, and cardamom.
  2. Whisk in banana and coconut milk to form a batter.
  3. Heat ghee in a pan, cook pancakes until golden.
  4. Serve with honey.

 

Protein per serving: ~8 grams
