Breakfast Banana Choc Chip Cookie

Ingredients (for 10-12 cookies):

  • 2 ripe bananas (mashed)
  • 1 cup millet flakes (for added protein)
  • 1/2 cup rolled oats
  • 1/4 cup almond butter or peanut butter (for extra protein)
  • 1/4 cup dark chocolate chips (or dairy-free for kids)
  • 1/4 cup chopped almonds (for crunch and protein)
  • 1 teaspoon cinnamon powder
  • A pinch of salt

Instructions:

  1. Preheat the oven: Preheat your oven to 180°C (350°F) and line a baking tray with parchment paper.
  2. Mix ingredients: In a large bowl, mash the bananas. Add the millet flakes, rolled oats, almond butter, chocolate chips, chopped almonds, cinnamon, and salt. Stir until everything is well combined.
  3. Shape the cookies: Scoop out the dough and shape into small, round cookies. Place them on the lined baking tray.
  4. Bake: Bake for 12-15 minutes, or until the cookies are golden brown on the edges.
  5. Cool and serve: Let the cookies cool for a few minutes and enjoy!
