Ayurvedic Black Bean Chili on a bed of Cauliflower Rice

Ingredients:

For the Chili:

  • 1 cup black beans, cooked (canned or pre-cooked)
  • 1 cup diced tomatoes (fresh or canned)
  • 1 cup vegetable broth
  • 1 cup bell peppers, diced (use a mix of colors)
  • 1 cup zucchini, diced
  • 1 cup cauliflower, finely chopped
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon chipotle powder (adjust to taste)
  • 2-3 star anise pods
  • Salt and black pepper to taste
  • Fresh cilantro for garnish

 

For the Chipotle Cauliflower Rice:

  • 2 cups cauliflower rice (grated cauliflower)
  • 1 tablespoon olive oil
  • 1/2 teaspoon chipotle powder
  • Salt to taste

Instructions:

For the Chili:

  • In a large pot, heat olive oil over medium heat. Add chopped onions and garlic, sauté until onions are translucent.
  • Add diced tomatoes, black beans, bell peppers, zucchini, and cauliflower to the pot. Stir well.
  • Pour in the vegetable broth and add cumin, coriander, cinnamon, and chipotle powder. Place the star anise pods in the pot.
  • Season with salt and black pepper to taste. Stir to combine.
  • Bring the chili to a simmer, then reduce heat to low. Cover and let it simmer for at least 30-40 minutes, allowing the flavors to meld.
  • Before serving, remove the star anise pods and adjust the seasoning if needed.
  • Garnish with fresh cilantro before serving.

 

For the Chipotle Cauliflower Rice:

  • In a large skillet, heat olive oil over medium heat.
  • Add cauliflower rice to the skillet and sauté for 5-7 minutes, or until it reaches your desired level of tenderness.
  • Sprinkle chipotle powder and salt over the cauliflower rice. Stir to combine and cook for an additional 2-3 minutes.
  • Remove from heat.

 

To Serve:

Place a generous portion of chipotle cauliflower rice on a plate.Ladle the Ayurvedic Star Anise & Cinnamon Black Bean Chili over the cauliflower rice.Garnish with fresh coriander leaves (cilantro).
