Ingredients (Serves 2):
- 1/2 cup basmati rice
- 1 cup water
- 1/2 cup coconut milk
- 1/2 cup green peas
- 1/2 cup diced zucchini
- 2 tablespoons shredded coconut
- 1 tablespoon ghee
- 1/4 teaspoon cardamom powder
Instructions:
- Cook rice with water and coconut milk.
- Sauté zucchini and peas in ghee with cardamom.
- Combine rice with vegetables, garnish with shredded coconut.
Protein per serving: ~8 grams
