Ingredients (Serves 2):
- 1/2 cup red lentils
- 2 cups water
- 1/2 cup coconut milk
- 1/2 teaspoon turmeric
- 1/4 teaspoon cumin powder
- 1 tablespoon ghee
- 2 tablespoons shredded coconut
Instructions:
- Cook lentils in water until soft.
- Heat ghee, stir in turmeric and cumin, then mix into lentils.
- Add coconut milk and shredded coconut. Simmer for 5 minutes.
Protein per serving: ~12 grams
