Coconut Lentil Soup

Ingredients (Serves 2):

  • 1/2 cup red lentils
  • 2 cups water
  • 1/2 cup coconut milk
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cumin powder
  • 1 tablespoon ghee
  • 2 tablespoons shredded coconut

 

Instructions:

  1. Cook lentils in water until soft.
  2. Heat ghee, stir in turmeric and cumin, then mix into lentils.
  3. Add coconut milk and shredded coconut. Simmer for 5 minutes.

 

Protein per serving: ~12 grams

Ayurvedic Side Note: Lentils provide grounding energy, while coconut milk cools and calms Pitta.
