Ingredients (Serves 2):
- 1/2 cup quinoa
- 1 cup water
- 1/2 cup coconut milk
- 1/2 cup steamed broccoli
- 1/2 cup steamed carrots
- 2 tablespoons shredded coconut
- 1 tablespoon ghee
- A pinch of cumin powder
- Salt to taste
Instructions:
- Cook quinoa in water and coconut milk until soft.
- Sauté broccoli and carrots in ghee with cumin.
- Serve veggies over quinoa, garnished with shredded coconut.
Protein per serving: ~11 grams
