Golden Breakfast Porridge

Ingredients (for 2 servings):

  • 2 cups plant-based milk (almond or soy milk)
  • 1/2 cup millet flakes
  • 1/2 cup rolled oats
  • 1 tablespoon ghee
  • 1 apple (peeled, cored, and chopped)
  • 1/4 cup raisins
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon cinnamon powder
  • A pinch of black pepper
  • 1 tablespoon honey (for serving)
  • 1 tablespoon bee pollen (for serving)
  • 1 tablespoon white sesame seeds (for serving)
  • 2 tablespoons chopped almonds (for topping)

Instructions:

  1. Cook the porridge: In a pan, combine plant-based milk, millet flakes, and oats. Bring to a gentle simmer and cook for 5-7 minutes, stirring occasionally, until the mixture is creamy. Set aside.
  2. Prepare the apple mixture: In another pan, heat ghee over medium heat. Add the chopped apple, raisins, turmeric, cinnamon, and black pepper. Cook for 3-4 minutes until the apples soften and become golden.
  3. Assemble and serve: Divide the porridge into bowls. Top with the ghee-baked apple mixture, then drizzle with honey. Sprinkle bee pollen, sesame seeds, and chopped almonds over the top for garnish.

  • Pitta: Pacifying
  • Kapha: Slightly Aggravating

In Ayurveda, honey is regarded as beneficial for pacifying kapha due to its heating properties, but it should not be heated. Black pepper enhances turmeric’s effectiveness and is ideal for balancing vata and kapha doshas.
