Kale, Ginger, and Sweet Potato Stir-Fry

Ingredients:

  • 2 cups kale leaves, stems removed and chopped
  • 2 medium sweet potatoes, peeled and diced
  • 1 tablespoon ghee or coconut oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1-inch piece of fresh ginger, grated
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon ground turmeric
  • 1/4 teaspoon ground black pepper
  • Salt to taste
  • Juice of 1/2 lime
  • Fresh cilantro leaves for garnish (optional)

 

 

Instructions:

  • Heat the ghee or coconut oil in a large skillet or pan over medium heat.
  • Add the chopped onion and sauté for a few minutes until it becomes translucent.
  • Stir in the minced garlic and grated ginger. Sauté for another minute until fragrant.
  • Add the diced sweet potatoes to the pan. Cook for about 10-15 minutes, or until the sweet potatoes are tender and slightly crispy on the outside. Stir occasionally to prevent sticking.
  • Sprinkle the ground cumin, ground coriander, ground turmeric, ground black pepper, and a pinch of salt over the sweet potatoes. Mix well to coat the sweet potatoes evenly with the spices.
  • Add the chopped kale to the pan and stir-fry for 2-3 minutes until the kale wilts and becomes tender.
  • Squeeze the juice of half a lemon over the stir-fry and give it a final stir to incorporate the flavors.
  • Taste and adjust the seasoning with more salt or lime juice if needed.
  • Remove from heat and garnish with fresh cilantro leaves if desired.
